These summer rolls packed with fresh veggies are the perfect light snack or appetizer. Load them up with extras like avocado, tofu, seitan, fresh herbs...you name it!
Prep Time: 20 minutes
Ingredients:
- Rice noodles
- Cucumber - julienned or sliced thin
- Carrots - julienned or sliced thin
- Napa cabbage - julienned or sliced thin
- Rice paper
- Sesame seeds (optional garnish)
- Fresh mint and basil (optional)
- Umami Bomb
Preparation:
- Mix together all of your veggies and the rice noodles in a large bowl
- Add in a couple of tablespoons of Umami Bomb (or enough to evenly coat the veggies) and mix until combined
- Assemble the rolls by soaking a rice paper sheet in a flat shallow bowl of warm water until softened
- Lift the rice paper sheet carefully from the water and spread flat on a clean tea towel
- Spoon the mixture horizontally onto the rice paper sheet
- Place a basil and/or mint leaf on top
- Roll the rice paper around the mixture and herbs like you would a burrito
- Top with sesame seeds (optional)
- Repeat until you have a gorgeous plate of prepared summer rolls
