These savoury waffles are a great way to change up your weekend morning routine. They also make great leftovers warmed up in a pan with a little vegan butter - yum!
Prep Time: 10 minutes
- Your favourite waffle mix (we like Kodiak Cakes)
- Zucchini (two small or one large)
- Green onions
- Garlic powder
- Umami Bomb
Coarsely shred zucchini onto a clean tea towel using a box grater.
Squeeze the moisture from the zucchini using the tea towel.
Place the shredded zucchini in a large bowl.
Add the waffle mix and prepare according to the package's instructions.
Add sliced green onions and garlic powder to taste.
Add a tablespoon of Umami Bomb and mix until combined.
Spoon mixture onto waffle iron and cook until deliciously crispy waffles are achieved.
Top with some more Umami Bomb for extra flavour and enjoy!
