Simple Chickpea Salad

A flavourful and fresh chickpea salad that can be eaten on it's own or piled high on a sandwich! 

Prep Time: 10 minutes 

Ingredients:

  • One can of chickpeas, drained and rinsed
  • One cup of cherry tomatoes, halved
  • Half a cucumber, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp of Umami Bomb
  • Optional: plant-based feta cheese

 

Preparation:

    1. Cut the tomatoes and cucumber.
    2. Gently mix the veggies and drained chickpeas.
    3. Drizzle the olive oil, lemon juice, and Umami Bomb over the salad.
    4. Mix to combine and season with salt and pepper to taste.
    5. Serve immediately or let chill. Tip: the chilled version firms up and work better for sandwiches.
    6. Enjoy!
