Simple Chickpea Salad
A flavourful and fresh chickpea salad that can be eaten on it's own or piled high on a sandwich!
Prep Time: 10 minutes
Ingredients:
- One can of chickpeas, drained and rinsed
- One cup of cherry tomatoes, halved
- Half a cucumber, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp of Umami Bomb
- Optional: plant-based feta cheese
Preparation:
- Cut the tomatoes and cucumber.
- Gently mix the veggies and drained chickpeas.
- Drizzle the olive oil, lemon juice, and Umami Bomb over the salad.
- Mix to combine and season with salt and pepper to taste.
- Serve immediately or let chill. Tip: the chilled version firms up and work better for sandwiches.
